Bio

Bilge Sayın Börekçi is a full-time assistant professor in the Department of Gastronomy and Culinary Arts, University of Ardahan, Turkey. She graduated in Food Engineering from the Faculty of Agriculture of Atatürk University, in 2011. She gained her MSc degree at Ankara University in 2013. Her MSc thesis is about microbial alkaline protease production which is entitled “Determination of the specifications of alkaline proteases of some anaerobic bacteria”. In 2020, she completed her PhD study entitled “Determination of citric acid production capacity of autochthonous Candida zeylanoides strains”. She has experience in the field of microbial productions, process optimization and food safety.
