Aims and Scope
Our journal from 2015-2017 “Journal of Food and Health Science” was published by their names, will continue in 2018 its mission with the new name "Food and Health”.
“Food and Health” journal is an international, scientific, open access periodical published in accordance with independent, unbiased, and double-blinded peer-review principles. The journal is the official publication of ScientificWebJournals (SWJ) and it is published quarterly on January, April, July, and October. The publication language of the journal is English or Turkish and continues publication since 2015.
The scope of the journal includes but not limited to; Food/Seafood/Food Technology/Food Chemistry/Food Microbiology/Food Quality/Food Safety/Food Contaminant/Food Allergen/Food Packaging/Modified Food/Functional Food/Dietary Supplements/Nutrition
The target audience of the journal includes specialists and professionals working and interested in all disciplines of food sciences and food/nutrition related with health.
The editorial and publication processes of the journal are shaped in accordance with the guidelines of the Committee on Publication Ethics (COPE), the European Association of Science Editors (EASE), the International Council of Medical Journal Editors (ICMJE), and National Information Standards Organization (NISO). The journal conforms to the Principles of Transparency and Best Practice in Scholarly Publishing (https://doaj.org/bestpractice).
Originality, high scientific quality, and citation potential are the most important criteria for a manuscript to be accepted for publication. Manuscripts submitted for evaluation should not have been previously presented or already published in an electronic or printed medium. The journal should be informed of manuscripts that have been submitted to another journal for evaluation and rejected for publication. The submission of previous reviewer reports will expedite the evaluation process. Manuscripts that have been presented in a meeting should be submitted with detailed information on the organization, including the name, date, and location of the organization.
Manuscripts submitted to “Food and Health” journal will go through a double-blind peer-review process. Each submission will be reviewed by at least two external, independent peer reviewers who are experts in their fields in order to ensure an unbiased evaluation process. The editorial board will invite an external and independent editor to manage the evaluation processes of manuscripts submitted by editors or by the editorial board members of the journal. The Editor in Chief is the final authority in the decision-making process for all submissions.
An approval of research protocols by the Ethics Committee in accordance with international agreements (World Medical Association Declaration of Helsinki “Ethical Principles for Medical Research Involving Human Subjects,” amended in October 2013, www.wma.net) is required for experimental, clinical, and drug studies. If required, ethics committee reports or an equivalent official document will be requested from the authors.
For manuscripts concerning experimental research on humans, a statement should be included that shows the written informed consent of patients and volunteers was obtained following a detailed explanation of the procedures that they may undergo. Information on patient consent, the name of the ethics committee, and the ethics committee approval number should also be stated in the Materials and Methods section of the manuscript. It is the authors’ responsibility to carefully protect the patients’ anonymity. For photographs that may reveal the identity of the patients, signed releases of the patient or of their legal representative should be enclosed.
“Food and Health” journal requires experimental research studies on vertebrates or any regulated invertebrates to comply with relevant institutional, national and/or international guidelines. The journal supports the principles of Basel Declaration (basel-declaration.org) and the guidelines published by International Council for Laboratory Animal Science (ICLAS) (iclas.org). Authors are advised to clearly state their compliance with relevant guidelines.
“Food and Health” journal advises authors to comply with IUCN Policy Statement on Research Involving Species at Risk of Extinction and the Convention on the Trade in Endangered Species of Wild Fauna and Flora for research involving plants.
All submissions are screened by a similarity detection software (iThenticate by CrossCheck).
In the event of alleged or suspected research misconduct, e.g., plagiarism, citation manipulation, and data falsification/fabrication, the Editorial Board will follow and act in accordance with COPE guidelines.
Each individual listed as an author should fulfil the authorship criteria recommended by the
ICMJE. The ICMJE recommends that authorship be based on the following 4 criteria:
1. Substantial contributions to the conception or design of the work; or the acquisition, analysis, or interpretation of data for the work; AND
2. Drafting the work or revising it critically for important intellectual content; AND
3. Final approval of the version to be published; AND
4. Agreement to be accountable for all aspects of the work in ensuring that questions related to the accuracy or integrity of any part of the work are appropriately investigated and resolved.
In addition to being accountable for the parts of the work he/she has done, an author should be able to identify which co-authors are responsible for specific other parts of the work. In addition, authors should have confidence in the integrity of the contributions of their co-authors.
All those designated as authors should meet all four criteria for authorship, and all who meet the four criteria should be identified as authors. Those who do not meet all four criteria should be acknowledged in the title page of the manuscript.
“Food and Health” journal requires and encourages the authors and the individuals involved in the evaluation process of submitted manuscripts to disclose any existing or potential conflicts of interests, including financial, consultant, and institutional, that might lead to potential bias or a conflict of interest. Any financial grants or other support received for a submitted study from individuals or institutions should be disclosed to the Editorial Board. To disclose a potential conflict of interest, the ICMJE Potential Conflict of Interest Disclosure Form should be filled in and submitted by all contributing authors. Cases of a potential conflict of interest of the editors, authors, or reviewers are resolved by the journal’s Editorial Board within the scope of COPE and ICMJE guidelines.
The Editorial Board of the journal handles all appeal and complaint cases within the scope of COPE guidelines. In such cases, authors should get in direct contact with the editorial office regarding their appeals and complaints. When needed, an ombudsperson may be assigned to resolve cases that cannot be resolved internally. The Editor in Chief is the final authority in the decision-making process for all appeals and complaints.
When submitting a manuscript to “Food and Health” journal, authors accept to assign the copyright of their manuscript to ScientificWebJournals. If rejected for publication, the copyright of the manuscript will be assigned back to the authors. Food and Health requires each submission to be accompanied by a Copyright Transfer Form (available for download at http://www.scientificwebjournals.com/JFHS/FHcopyright2018.pdf). When using previously published content, including figures, tables, or any other material in both print and electronic formats, authors must obtain permission from the copyright holder. Legal, financial and criminal liabilities in this regard belong to the author(s).
Statements or opinions expressed in the manuscripts published in “Food and Health” journal reflect the views of the author(s) and not the opinions of the editors, the editorial board, or the publisher; the editors, the editorial board, and the publisher disclaim any responsibility or liability for such materials. The final responsibility in regard to the published content rests with the authors.
The manuscripts should be prepared in accordance with ICMJE-Recommendations for the Conduct, Reporting, Editing, and Publication of Scholarly Work in Medical Journals (updated in December 2015 - http://www.icmje.org/icmje-recommendations.pdf). Authors are required to prepare manuscripts in accordance with the CONSORT guidelines for randomized research studies, STROBE guidelines for observational studies, STARD guidelines for studies on diagnostic accuracy, PRISMA guidelines for systematic reviews and meta-analysis, ARRIVE guidelines for experimental animal studies, TREND guidelines for non-randomized studies, and COREQ guidelines for qualitative studies.
Manuscripts can only be submitted through the journal’s online manuscript submission and evaluation system, available at http://dergipark.gov.tr/journal/1646/submission/start. Manuscripts submitted via any other medium will not be processed.
Manuscripts submitted to the journal will first go through a technical evaluation process where the editorial office staff will ensure that the manuscript has been prepared and submitted in accordance with the journal’s guidelines. Submissions that do not conform to the journal’s guidelines will be returned to the submitting author with technical correction requests.

Article types accepted are: Original Article (Full paper or Short Communication), Review Article. Page limits are as follows: Full or review papers no limited; Short Communication 7 page plus no more than 5 figures/tables in total. If the Editor feels that a paper submitted as a Full Paper would be more appropriate for the Short Communications section, then a shortened version will be requested.
Submission of manuscripts
Submission of an article is understood to imply that the article is original and is not being considered for publication elsewhere. Submission also implies that all authors have approved the paper for release and are in agreement with its content. Upon acceptance of the article by the journal, the author(s) will be asked to transfer the copyright of the article to the publisher. This transfer will ensure the widest possible dissemination of information.
Preparation of manuscripts
1. Manuscripts should be written in English or Turkish.
2. Manuscripts should be prepared with numbered lines, and single space throughout, i.e. also for abstracts, footnotes and references. Every page of the manuscript, including the title page, references, tables, etc. should be numbered. However, in the text no reference should be made to page numbers; if necessary, one may refer to sections. Underline words that should be in italics, and do not underline any other words. Avoid excessive use of italics to emphasize part of the text.

Acknowledgements and any additional information concerning research grants, etc.
1. In typing the manuscript, titles and subtitles should not be run within the text. They should be typed on a separate line, without indentation. Use lower-case lettertype.
2. Units and abbreviations
3. In principle SI units should be used except where they conflict with current practise or are confusing. Other equivalent units may be given in parentheses.
4. Units and their abbreviations should be those approved by ISO (International Standard 1000:92
5. SI units and recommendations for the use of their multiples and of certain other units). Abbreviate units of measure only when used with numerals.
6. If a special instruction to the copy editor or typesetter is written on the copy it should be encircled. The typesetter will then know that the enclosed matter is not to be set in type. When a typewritten character may have more than one meaning (e.g. the lower case letter l may be confused with the numeral 1), a note should be inserted in a circle in the margin to make the meaning clear to the typesetter. If Greek letters or uncommon symbols are used in the manuscript, they should be written very clearly, and if necessary a note such as "Greek lower-case chi" should be put in the margin and encircled.
The English abstract should be clear, descriptive and not longer than 180 words (if the article is written in Turkish, Turkish abstract must be added in addition to English abstract).
1. Authors should take notice of the limitations set by the size and lay-out of the journal. Large tables should be avoided. Reversing columns and rows will often reduce the dimensions of a table.
2. If many data are to be presented, an attempt should be made to divide them over two or more tables.
3. Drawn tables, from which prints need to be made, should not be folded.
4. Tables should be numbered according to their sequence in the text. The text should include references to all tables.
5. Each table should be typewritten on a separate page of the manuscript. Tables should never be included in the text.
6. Each table should have a brief and self-explanatory title.
7. Column headings should be brief, but sufficiently explanatory. Standard abbreviations of units of measurement should be added between parentheses.
8. Vertical lines should not be used to separate columns. Leave some extra space between the columns instead.
9. Any explanation essential to the understanding of the table should be given as a footnote at the bottom of the table.
1. Submitting your artwork in an electronic format helps us to produce your work to the best possible standards, ensuring accuracy, clarity and a high level of detail.
2. Always supply high-quality printouts of your artwork, in case conversion of the electronic artwork is problematic.
3. Make sure you use uniform lettering and sizing of your original artwork.
4. Save text in illustrations as "graphics" or enclose the font.
5. Only use the following fonts in your illustrations: Arial, Courier, Helvetica, Times, Symbol.
6. Number the illustrations according to their sequence in the text.
7. Use a logical naming convention for your artwork files, and supply a separate listing of the files and the software used.
8. Provide all illustrations as separate files.
9. Provide captions to illustrations separately.
10. Produce images near to the desired size of the printed version.
Regardless of the application used, when your electronic artwork is finalised, please "save as" or convert the images to one of the following formats (Note the resolution requirements for line drawings, halftones, and line/halftone combinations given below.):
JPEG or PNG: min. 300 dpi
EPS: Vector drawings. Embed the font or save the text as "graphics".
TIFF: Colour or greyscale photographs (halftones): always use a minimum of 300 dpi
TIFF: Bitmapped line drawings: use a minimum of 1000 dpi.
TIFF: Combinations bitmapped line/half-tone (colour or greyscale): a minimum of 500 dpi is required.
DOC, XLS or PPT: If your electronic artwork is created in any of these Microsoft Office applications please supply "as is".
Please do not:
• Supply embedded graphics in your word processor (spreadsheet, presentation) document;
• Supply files that are optimized for screen use (like GIF, BMP, PICT, WPG); the resolution is too low;
• Supply files that are too low in resolution;
• Submit graphics that are disproportionately large for the content.
Authors please note:
If you submit artwork that does not satisfy these criteria, publication may be delayed.
Provide all illustrations as high-quality printouts, suitable for reproduction (which may include reduction) without retouching. Number illustrations consecutively in the order in which they are referred to in the text. Clearly mark all illustrations on the back (or - in case of line drawings - on the lower front side) with the figure number and the author's name and, in cases of ambiguity, the correct orientation. Mark the appropriate position of a figure in the article.

In-text Citation with APA
The APA style calls for three kinds of information to be included in in-text citations. The author's last name and the work's date of publication must always appear, and these items must match exactly the corresponding entry in the references list. The third kind of information, the page number, appears only in a citation to a direct quotation.

1. Formula should be typewritten, if possible. Leave ample space around the formulae.
2. Subscripts and superscripts should be clear.
3. Greek letters and other non-Latin symbols should be explained in the margin where they are first used. Take special care to show clearly the difference between zero (0) and the letter O, and between one (1) and the letter l.
4. Give the meaning of all symbols immediately after the equation in which they are first used.
5. For simple fractions use the solidus (/) instead of a horizontal line.
6. Equations should be numbered serially at the right-hand side in parentheses. In general only equations explicitly referred to in the text need be numbered.
7. The use of fractional powers instead of root signs is recommended. Also powers of e are often more conveniently denoted by exp.
8. Levels of statistical significance which can be mentioned without further explanation are *P<0.05, **P<0.01 and ***P<0.001.
9. In chemical formulae, valence of ions should be given as, e.g., Ca2+ and not as Ca++.
10. Isotope numbers should precede the symbols, e.g., 18O.
11. The repeated writing of chemical formulae in the text is to be avoided where reasonably possible; instead, the name of the compound should be given in full. 1. Authors and Editors are, by general agreement, obliged to accept the rules governing biological nomenclature, as laid down in the International Code of Botanical Nomenclature, the International Code of Nomenclature of Bacteria, and the International Code of Zoological Nomenclature.
2. All biotica (crops, plants, insects, birds, mammals, etc.) should be identified by their scientific names when the English term is first used, with the exception of common domestic animals.
3. All biocides and other organic compounds must be identified by their Geneva names when first used in the text. Active ingredients of all formulations should be likewise identified.
4. For chemical nomenclature, the conventions of the International Union of Pure and Applied Chemistry and the official recommendations of the IUPAC IUB Combined Commission on Biochemical Nomenclature should be followed.
1. An author, when quoting from someone else's work or when considering reproducing an illustration or table from a book or journal article, should make sure that he is not infringing a copyright.
2. Although in general an author may quote from other published works, he should obtain permission from the holder of the copyright if he wishes to make substantial extracts or to reproduce tables, plates, or other illustrations. If the copyright-holder is not the author of the quoted or reproduced material, it is recommended that the permission of the author should also be sought.
3. Material in unpublished letters and manuscripts is also protected and must not be published unless permission has been obtained.
4. A suitable acknowledgement of any borrowed material must always be made.
One set of proofs will be sent to the corresponding author as given on the title page of the manuscript. Only typesetter's errors may be corrected; no changes in, or additions to, the edited manuscript will be allowed. Subsequent corrections will not be possible, so please ensure your first sending is complete.
