Kayseri’de Satışa Sunulan Tavuk Eti ve İç Organlarında Arsenik Düzeylerinin Belirlenmesi

Abstract

Arsenik doğada yaygın olarak bulunmakta ve birçok gıda grubu yoluyla gıda zincirine katılmaktadır. Bu çalışma Kayseri/Türkiye’de tüketime sunulan tavuk eti ve iç organlarındaki arsenik düzeylerinin belirlenmesi amacıyla yapıldı. Farklı marketlerden alınan toplam 21 örnekte (10 tavuk eti ve 11 tavuk iç organı) arsenik kalıntıları İndüktif Eşleşmiş Plazma-Kütle Spektroskopisi (ICP-MS) ile belirlendi. Tavuk etlerindeki arsenik düzeyleri ortalama 0.081±0.035 μg/g bulunurken iç organlardaki arsenik düzeyleri ortalama 0.055±0.012 μg/g olarak bulundu. Tavuk eti ve iç organlarının arsenik düzeyleri arasındaki fark istatistiksel olarak önemli bulunmadı (p>0.05). Sonuç olarak ülkemizde de Amerika, Japonya ve Avrupa’da olduğu gibi belli aralıklarla geniş çaplı total diyet çalışmaları planlanarak Türk halkının arsenik ve diğer toksik iz elementlere maruziyeti değerlendirilmeli ve gerekli tedbirler alınmalıdır.

Arsenic Levels in Chicken Meat and Giblets Retailed in Kayseri

Abstract

Arsenic is commonly present in the nature and could be introduced into the food chain by many different food groups. This study was carried out to determine the arsenic levels of chicken meat and giblets consumed in Kay-seri, Turkey. The arsenic residues ofa total of 21 samples (10 fresh chicken meat and 11 chicken giblets) obtained randomly from different retail markets were analyzed with Inductively Coupled Plasma-Mass Spectrometry (ICP-MS). The mean arsenic levels in chicken meat were determined as 0.081±0.035 μg/g whereas in chicken giblet the average was found to be 0.055±0.012 μg/g. No statistically significant differences were observed between the arsenic levels of chicken meat and giblets analyzed (p>0.05). Therefore it is needed to monitor Turkish people expose to arsenic and other toxic trace elements by large scale total diet studies and take measures as regularly done in the USA, Japan and Europe.
