Vanilya ve farklı alanlarda kullanımı

Abstract

Gıda amaçlı yetiştirilen tek orkide vanilya(Vanilla planifolia Andr.) olarak bilinmektedir. Vanilyanın kendine has aroması vanilya kabuklarının farklı yöntemlerle işlenmesiyle meydana gelmektedir. Vanilya;gıda, tıp ve kozmetik endüstirisinde kullanılmaktadır. Doğal vanilyanın maliyetinin yüksek olması nedeniyle vanilyanın ana bileşen molekülü olan vanilini elde etmek için çeşitli stratejiler geliştirilmiştir.Vanilyanın ateş düşürücü etkisi, bedensel yorgunlukları azaltma, vücutta meydana gelen romatizma ağrılarına iyi geldiği, düzensiz uyku problemlerine karşı değerlendirildiğ; bunun yanında gram pozitiflere, gram negatif bakterilere, mayalar ve küflere karşı antimikrobiyal özelliklere sahip olduğu da bilinmektedir.
Bu çalışmada vanilya, vanilya üretimi, vanilyanın gıda, tıp ve kozmetik alanındaki uygulamalarına ve sağlığa faydalarına yer verilmiştir.

Vanilla and its use in different fields

Abstract

The only orchid grown for food is known as vanilla (Vanilla planifolia Andr.). The unique aroma of vanilla is created by processing vanilla pods with different methods. Vanilla is used in the food, medicine and cosmetics industries. Due to the high cost of natural vanilla, various strategies have been developed to obtain vanillin, the main component molecule of vanilla. The antipyretic effect of vanilla was evaluated against physical fatigue, relief from rheumatic pains in the body, and irregular sleep problems; It is also known to have antimicrobial properties against gram positive, gram negative bacteria, yeasts and molds.In this study, vanilla, vanilla production, applications of vanilla in food, medicine and cosmetics and its health benefits are included.
